Rosemary and Lemon Refresher

 Perfect for warm and lazy afternoons, this Rosemary and Lemon Whiskey Refresher is light and delightful.


I like to make and serve it in a gorgeous glass look acrylic jug with acrylic tumblers, (which are perfect for both little and big butter fingers). You can sub the whiskey for vodka if that’s more to your liking, or leave it out all together to make it suitable for the whole


Rosemary Simple Syrup

1 cup caster sugar

1 cup water

4 sprigs fresh  Rosemary

 For the jug

2L soda water

3 large lemons

Plenty of ice at least two cups

2 extra sprigs fresh rosemary

6 or so violet flowers

6 standard nips of whiskey or vodka 



If you don’t have violets on hand you can leave them out but they’re super simple to grow in pots and they really do look sweet. Plant a pot each of rosemary, lavender and one of mint and you’ve got yourself a cocktail staples garden right there!

 The simple syrup is exactly that, simple! It will make about 2 cups and will last in your fridge for about a month, so you can make more than one jug!

 1 Combine the sugar, water and rosemary sprigs in a small saucepan. Heat until boiling and then stir until the sugar dissolves, this should only take about five mins.  Allow it to cool then sieve out the Rosemary and pop your syrup in a jar.

2 Juice two of the lemons and cut a few rounds from the third.

 3 Add 1 cup of your cooled simple syrup to your jug, the lemon juice, 6 nips of your booze of choice, (we love the whiskey but vodka is great too) a tonne of ice and top with soda.

4 Pop in the extra rosemary, lemon rounds, finish with the violet flowers and serve! Cheers to spring!
