Super Simple Green Sauce

An abundance of parsley means only one thing in this house, Super Simple Green Sauce! There are a billion salsa verde, chimichurri and other green sauce recipes, most of which have double the ingredients and to be honest, most of the time I just can’t be faffed with it all… this recipe just has all the good flavour with almost zero effort and it freezes beautifully.











4 cups green soft herbs I use mostly parsley and add some mint and dill (maybe a cup each) once you get the mix how you like it, you can really use whatever soft green herbs you fancy.

 juice of 1 lemon

5 crushed garlic cloves

1/4 cup olive oil

1 tsp salt flakes

And simply whizz it all in a blender, there’s no anchovies, no capers, no coriander (you can if you like but it’s a hard nope from me) no vinegar, no faffing!  You can add extra olive oil or lemon juice  to thin it down a little if you like, I usually do if I’m going to have it as a salad dressing. 

Pop it into jars or containers and you're done! I like to use all those awkward size old pesto jars or ones we’ve bought jams in from the market, you know how they accumulate in your drawers and you cant bear to throw them out? Now is their time to shine! 

I usually make a double batch, keep some in the fridge (it lasts a few days) and pop two small jars in the freezer for later, you can also freeze it in ice cube trays for super handy portions.  We love it on salads, potatoes, fish, eggs, so many options.
